Ingredients

  • 2 lbs Flounder, rinsed and patted dry
  • cooking spray
  • 1/4 tsp kosher or sea salt
  • 1 tbsp lemon juice
  • 1/2 cup grated parmesan cheese
  • 1/4 cup butter
  • 3 tbsp mayonnaise
  • 3 tbsp chopped green onion (optional)
  • 2 tbsp lemon juice

Cooking Instructions

Preheat oven to 375 degrees and prepare a 13×9 baking dish with non-stick cooking spray. Season both sides of flounder fillets with salt. Place in baking dish and brush 1 tbsp lemon juice over fillets. Mix parmesan cheese, melted butter, mayonnaise, green onions, and 2 tbsp lemon juice together and spoon over the fillets. Bake flounder for 10 minutes. Switch oven to broil; broil fillets until the tops are just browned, 3 to 5 minutes.
