• 3 medium sweet potatoes
  • 1 large cooking apple (we recommend Golden Delicious or Granny Smith)
  • 1/3 cup packed brown sugar
  • 1 Tbsp water
  • 1 Tbsp butter
  • dash ground cloves
  • 1/4 cup chopped pecans or walnuts, toasted

Cooking Instructions

Preheat oven to 350. Wash and peel sweet potatoes. Cut off woody portions and ends. Slice potatoes into 1/2 inch thick pieces. Place a steamer basket inside saucepan, with water level in saucepan just below bottom of basket. Bring water to boil, then add potatoes. Cover, reduce heat and steam for 10 to 15 minutes or until just tender. While potatoes are cooking, core and slice the unpeeled apple. In a greased, two-quart casserole, combine potato slices and apple slices. In a small saucepan bring the brown sugar, water, butter and cloves to a boil. Drizzle the mixture evenly over potatoes and apples. Bake uncovered for 30 to 35 minutes or until potatoes and apples are glazed, stirring twice. Sprinkle dish with toasted nuts. Makes 4 servings.
